Children's Favorite Cheese Burger Soup


Cheese Burger Soup has been a long-standing favorite for many children and adults alike. It is fun, delicious and a good way to hide in a few extra vegetables without any coaxing. This recipe makes a very large batch to feed a hungry crowd.

The Mix-In's

  1. Start by browning the beef and onion over medium high heat in a large skillet. Continue mixing beef until it is thoroughly cooked and onions are translucent and tender, then drain and set aside.
  2. In the same skillet, melt 2 tbsp butter and then sauté the carrots, celery, parsley and basil until the carrots are tender. When that occurs, add in the chicken stock and bring it to a boil. Now, add the browned beef back into the skillet, along with the diced potatoes. Gently simmer for 12-15 minutes or until the potatoes are fork tender. Remove from heat and set aside.
  3. In a separate small saucepan melt the remaining 3 tbsp of butter then add in the flour and mix until it reaches a dough like consistency. Whisk in the milk and continue cooking over medium low heat until the mixture has thickened and is smooth. Add this and the ground beef to a bigger soup pot and mix to combine. Bring to a boil, stirring occasionally.
  4. Reduce heat and mix in the American cheese, stirring until all the cheese has melted and is thoroughly mixed in. Season to taste with salt and white pepper and enjoy.

The Toppin's

Additional toppings you can have available to sprinkle on this soup are slivered raw onions, bacon bits, cheddar cheese, and some like a touch of sour cream. These give the soup additional texture as well as new and exciting flavor combinations.

The Eat-In's

Cheese burger soup is delicious, hearty and warming and can be the perfect lunch or after school dish to fill cold bodies and delight even the smallest child. Paired with a salad and crusty bread, this soup can stand alone as a main course as well.
