Green tomato sauce rocks!
Red tomato sauce is so common. Imagine the buzz when you serve your hamburgers with some green stuff. Dinner-time conversation will never be boring.
Ingredients3 kilogram green tomatoes
100g kosher salt
30ml olive oil
4 onions
3 cloves garlic
700g brown sugar
600ml cider vinegar
2 teaspoon ground turmeric
1 teaspoon mustard seeds
1 teaspoon celery seeds
1 teaspoon ground ginger
1 teaspoon black peppercorns
1 teaspoon ground coriander
- Wash the green tomatoes and chop them into chunks, and remove the seeds
- Place the chopped tomatoes in a big mixing bowl and add the kosher salt
- Mix the kosher salt and tomato chunks up and leave it for an hour
- Pound the turmeric, mustard seeds, black peppercorns and coriander in a mortar or ground in a small food processor
- Wash and peel the onions and chop finely
- Crush the garlic with the side of your knife and remove the skin
- Heat the olive oil in a deep-based saucepan and add the finely chopped onions and crushed garlic
- Fry them gently until soft but not brown
- Rinse the tomato chunks to remove the salt and excess water
- Add the drained tomatoes into the pot and bring the pot to a boil
- Add the vinegar, ground spices and sugar
- Stir to dissolve the sugar and bring the pot back to a boil
- Reduce the heat to a slow simmer and simmer for 1 hour
- Use a handheld blender to blend the mixture into a smooth consistency
- Cook until the tomato sauce reaches your desired consistency
- Remove from heat and let the sauce cool before storing in sterilized jars
- Place in the refrigerator until needed
